Our favorite snack is chips and salsa. It is also a guilty pleasure, since tortilla chips are our main source of junk food. It's the only junk food item we have in stock all the time.
This salsa is cinchy to make, with only five ingredients. It is cheaper to make than store-bought, and tastes better than the best salsa you've ever had. There's no cilantro in it because I can't stand the taste/smell/thought of cilantro (have you heard, some scientists think cilantro-hating is genetic?). You can add it to yours though, if you insist.
There are only two sure-fire ways to ruin this recipe: Add too much onion, or too much garlic. If you think you'd like more than I say to use, try it my way first and then add more if you don't like it.
Ingredients:
four medium/large tomatoes
one serrano pepper
(use one jalepeno if you want it mild, use two serranos if you want it del inferno)
half of a small white or yellow onion
one clove garlic
juice from one lime
one teaspoon salt
Method:
Cut everything except the lime and salt into pieces small enough to fit into your food processor. Pulse until it is the way you like it. Pour into a bowl, and add the salt and lime juice. Stir it up. Let it chill out in the fridge for at least an hour before serving. Will last at least a week in the fridge, and can also be frozen - but for how long, I know not.
Too spicy for you? Try adding more tomatoes. Or, you can use it as an ingredient in chili or soup or anything that calls for a can of Rotel tomatoes.
i want to make this for darren! i need more specifics, though, or else i will mess it up. like wth is a serrano pepper? and how big is a medium/large tomato or a small onion? and what do i do if i don't have a food processor?
ReplyDeletea serrano pepper is green, about 3 inches long, and skinny. basically a skinnier spicier jalepeno. in the section with the other peppers (habaneros, jalepenos, and such).
ReplyDeletemedium/large tomatoes are at least as big as your fist.
a small onion is smaller than your fist. try just getting an average sized onion (one that looks most like the other onions) and then use just a 1/4 of it instead of 1/2. you can add more if it wasn't enough.
a blender could work if you don't have a food pro. just pulse until it looks like salsa. don't liquefy.
